Peanut Butter Oatmeal No-Bake Cookies

These no bake cookies have a candy fudge consistency. Very easy to make and really good!

  • 2 cups sugar
  • 1/4 cup butter
  • 1/2 cup milk
  • 3 cups dried oats
  • 1 cup peanut butter
  • 1/4 tsp salt
  • 1 tbsp sunflower or peanut oil

First we are going to make our own homemade peanut butter. On a hot frying pan add 1 cup raw peanuts (also called ground nuts). Constantly stir the nuts until they start to crack in half. About 3-4 minutes. Be careful not to burn them.

When they are done, immediately take them out of the hot pan and put on a dry dish to cool down.

Wait about 10 minutes for the nuts to cool and then begin peeling off the skin. It should be very simple to take off.

Next add the peeled nuts to a blender or food processor. Also add 1 tbsp of sunflower or peanut oil to help grind the nuts down smoothly.

This is what you should get after blending for about 5-8 minutes.

Next, heat up the sugar, butter and milk on medium high flame.

You will also need a thermometer to check the temperature of the mixture. If you don’t have one then please at least have a timer because this recipe is very sensitive and you could end up with either a sticky cookie or one that crumbles in your hand.

Bring the mixture to a rolling boil. If you have a thermometer, the temperature that it needs to reach is 238F/114C. If you are using the timer method, then begin timing when the mixture begins to boil and boil for 3 minutes maximum.

When the mixture has been boiling for 3 minutes, turn off the flame and immediately add the dried oats and peanut butter. Stir the mixture until fully combined.

You will notice that it is becoming very thick and even the sugar may begin to crystallize.

 

 

Place either wax paper or plastic on top of a flat surface for placing the cookies.

With a spoon, begin making little cookies and placing them on the flat surface for cooling.

They should begin to harden very quickly to a fudge like consistency.

 

Cool for at least 20 minutes and you are ready to offer to Kṛṣṇa with love and devotion!
