Sweet Potato Soup with Chunky Paneer and Bell Peppers

Amazing soup! So delish!

    •    1 medium potato
    •    1 large sweet potato
    •    5 small tomatoes
    •    3 cups whey
    •    1 cup cream
    •    1 green chili
    •    1 small piece fresh ginger
    •    1 tbsp ghee
    •    1 fried red chili
    •    2 tsp salt
    •    1/2 tsp pepper
    •    1/2 tsp dried oregano
    •    1 tbsp sugar
    •    Paneer cut into cubes
    •    1 green bell pepper (add last)

First peel and chop all the veggies, ginger and chili. Heat the ghee in a large pot and fry the ginger, chili and dried red pepper for about a minute. Then add the chopped potatoes and tomatoes and stir fry for about 20 seconds. Then add the whey, cream and all remaining ingredients except the paneer and bell pepper.

Cook the veggies for about 10 minutes on medium high flame or until the potatoes are soft and fully cooked. Turn off the flame and using a hand blender, blend all the ingredients until nice a smooth.

Then turn the heat on low. Add the cubed paneer pieces and julienne chopped bell pepper. Continue cooking for another 4-5 minutes until the bell pepper is cooked al dente and you are done!

Now you are ready to offer to Kṛṣṇa with love and devotion!
