Sweet Mango and Chenna Cheese Stir-fry

Mangoes and cheese make a great combination! Try this unique stir fry next time!

    •    3 cups cubed homemade chenna cheese
    •    3 medium sweet mangos
    •    2 tbsp ghee
    •    2 tbsp masala spice mix
    •    1 tsp mustard seeds
    •    1 tsp cumin seeds
    •    1/2 to 1 tsp salt
    •    1 tsp black pepper
    •    bunch of fresh cilantro

First prepare the homemade chenna cheese. Chenna cheese is prepared the same way as regular paneer except it is not pressed, leaving a nice soft cheese. Boil 3 liters of milk and add an acid to curdle. Separate the curds from the whey and place the curds into a colander allowing it to drip and cool for about 30 minutes.

Next separate all of the mango pulp from the skins and cut the pulp into small cubes, then set aside.

After 30 minutes cut the chenna cheese into bite sized cubes. In a non stick frying pan heat 1 tbsp ghee. Then add the cubed chenna cheese and a little sprinkle of salt and pepper. Fry until golden. When finished, pour the fried cheese onto a plate or bowl.

Using the same non stick frying pan, heat 1 tbsp of ghee and add the mustard and cumin seeds. When the mustard seeds start to spatter add the chopped mango pulp, masala spice mix, salt and pepper. Cook for about 8 minutes then add the fried chenna cheese. Combine everything nicely and cook for another minute or two and you are done.

Add some chopped fresh cilantro leaves and serve with chapatis. Now you are ready to offer to Kṛṣṇa with love and devotion!
