Super Creamy and Chunky Coconut Lime Shrikhand Popsicles
Try this easy to make summer treat! Super creamy with sweet coconut chunks and a hint of lime flavor, this unique Popsicle brings the traditional Shrikhand dessert to a whole new level!
- 2 cups thick yogurt cheese – Learn how to make yogurt cheese
- 1 can sweetened condensed milk
- 1 1/2 cups sweetened coconut shreds
- 2 tbsp lime juice
- 1 tsp lime zest
- 10 small plastics cups (or any popsicle molds)
- 10 popsicle sticks
First we will need to prepare the homemade sweetened coconut shreds. Break open a coconut and take out all the meat. Cut all the brown coating around the coconut leaving just the pure white part.
Next preheat the oven to 450F/230C. Place the coconut chunks in a blender and pulse only like 4 or 5 times until you have small pieces like this.
Then place the shredded coconut pieces on a baking sheet.
Add the powdered sugar.
Then mix it all together using your hands and then spread out evenly throughout the pan. Place in the heated oven for 5 minutes.
After 5 minutes, take out the coconut and again mix it all together. Let the coconut shreds cool.
Here are your finished and ready to use sweetened coconut shreds.
Now we will begin to prepare the popsicle mix. Place 2 cups of thick yogurt cheese and 1 can of sweetened condensed milk into a mixing bowl.
Using a hand blender, blend the yogurt cheese and condensed milk until you have a nice a smooth consistency like this.
Then add the homemade sweetened coconut chunks, lime juice and lime zest.
Mix it all together using a spoon.
Mix until fully combined.
Now get your popsicle molds ready to be filled.
Fill each mold and then place a popsicle stick in the center. The coconut mixture is thick enough to hold the stick in place. Place all popsicles in the freezer over night. That’s it!
