Paneer Sabji

Serve this very tasty sabji with chapatis for lunch or dinner!

    •    2 cups chopped paneer
    •    5 fresh tomatoes
    •    2 medium potatoes
    •    2 medium carrots
    •    2 small zucchini
    •    1 green chile
    •    1 tbsp chopped ginger
    •    2 tbsp ghee
    •    1 tsp mustard seeds
    •    2 tsp salt
    •    1/2 tsp pepper
    •    1/4 tsp hing
    •    1/2 tsp turmeric
    •    1 tbsp sugar
    •    1/2 cup cream
    •    1 cup whey or water

First add the tomatoes, green chile and ginger to the blender and blend until smooth.

Chop up the potatoes and carrots.

Chop the zucchini and paneer.

Then heat the ghee in a large pot and add the mustard seeds.

As soon as the mustard seeds begin snapping in the pot, add the chopped potatoes and carrots. Cook for about 3 minutes.

Then add the tomato sauce and all remaining dry spices.

Stir it up.

Add the chopped paneer.

Then the cream.

Cook for about 8 minutes.

Then add the chopped zucchini.

Add the whey and cook for another 10 more minutes. The sauce will continue reducing in size and absorbing into the veggies. *Do not put a lid, we want the sauce to reduce nicely.

After the sauce has reduced, this is what it should look like.
