Mexican Cilantro Lime Rice Bowl with Spiced Black Beans and Salsa

Gotta try this Cilantro Lime Rice Bowl with Spiced Black Beans made with “Super Simple Tomato Salsa”!

Cilantro Lime Rice:

• 1 cup uncooked long-grain white rice
• 1 teaspoon butter or ghee
• 2 teaspoons freshly squeezed lime juice
• 2 cups water or whey
• 1 tablespoon freshly squeezed lime juice
• 2 teaspoons sugar
• 4 tablespoons fresh chopped cilantro

First let’s begin with the rice. In a a saucepan combine rinsed rice, butter or ghee, 2 teaspoons of lime juice, and water or whey if you have. Bring to a boil. Cover and cook on low until rice is tender. Remove from heat.

Now place your cooked rice into a mixing bowl.

In a small bowl, whisk together lime juice, sugar, salt and cilantro.

Now pour the mixture over the hot cooked rice and mix in as you fluff the rice.

 Gather all your ingredients for spicing the black beans.

These are the fresh black beans that I cooked in a pressure cooker for 15 minutes.

 Take one tomato and one chili and blend in the blender until a smooth sauce.

 This is what it should look like.

 Now, heat the ghee in a small pan.

 Add another chopped chili and fry for a few seconds.

Then add the blended tomato sauce.

Now add the remaining spices: salt, pepper and cayenne.

Now add 1 fresh chopped tomato.

Oh, I almost forgot! Add 1 tsp sugar. This helps to reduce the acidity of the tomatoes.

Now cook on medium high for about 8 minutes until all the tomatoes are fully cooked.

Now add the tomato sauce to your cooked beans and cook for an additional 5-8 minutes. You will notice the sauce thickening and that is when you know you are done.

Gather all your ingredients. Place in a mortar or bowl.

Mash it all up and you are done!

NOTE* Do not use a blender or your salsa will become a sauce.

Now time to build the plate.

First place a scoop of Lime rice in a bowl and then a scoop of Black Beans and finally a nice scoop of fresh salsa and you are ready to serve to Kṛṣṇa! Hari bol!
