All Homemade – Peanut Butter Bread with Mango Jam

A little twist on the traditional peanut butter and jelly sandwich. These are very simple recipes and a must try!!

Peanut Butter Bread:

  • 2 cups wheat flour
  • 2 cups oat flour
  • 1 cup plain yogurt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup chunky peanut butter or 1 1/2 cup ground roasted peanuts
  • 1/2 cup sugar

Mango Jam:

  • 4 cups ripe fresh mango pulp
  • 3 cups sugar
  • 1/4 cup lemon or lime juice

We are going to start by making a very simple jam. First you will need fresh ripe mangoes.

Take all the pulp out and discard the skin and seeds until you have 4 cups of pulp cut into bite sized pieces.

In a large pot with a heavy base add the sugar.

Then add the lemon or lime juice and stir it up.

Turn the flame on the lowest setting and begin melting the sugar down. It takes about 10 minutes to melt down.

Here is what it should look like. Now time for the next step.

Add all the mango puree and cook for another 20 minutes on the lowest heat setting.

 

You will begin to see white bubbles forming on the top.

 

When the white bubbles turn a more golden color, like this, you will need to take this out of the mixture. If you leave this in the jam, you will not get a nice transparent style jam, it will be more cloudy.

After 20 minutes, check to see if the jam thickens when putting it on a cold plate or a piece of ice. If it thickens like jam then you are done. If not, then continue cooking until you get the right consistency.

Here the jam is done cooking.

 

Now pour it into a glass jar that you will use for storing the jam. Let it cool down and then place in the fridge overnight.

 

The next day you have your very own homemade sweet jam!! How easy was that?!

Now it is time to make the Peanut Butter Bread. Preheat the oven to 230C/450C. We are going to use some oat flour. You can make your own by using whole oats and grinding them up in a blender or coffee grinder.

Here is what the oat flour should look like after grinding.

 

Now add the following ingredients into a mixing bowl and mix together nicely:

2 cups wheat flour
2 cups oat flour
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt

For this recipe you can use chunky peanut butter or just ground up roasted peanuts. I used the ground up peanuts this time. First I dry roast the peanuts until they began to split open and gave a nice aroma.

Then I let them cool for about 5 minutes.

Then place in a blender and blend into small pieces.

Add the peanuts and brown sugar to the flour mixture.

Stir up and then add the yogurt. Mix it all with your hand until you get a nice ball of dough.

Flour your baking dish.

Then roll up the dough into a log shape and cut lines across the top making sure not to go too deep. Then place in the baking pan. Bake for 20 minutes at 230C/450F and then reduce the heat to 200C/390F for an additional 30 minutes. You know it is done when you tap on it and it sounds hollow.

Slice the bread and top with homemade mango jam and your are ready to offer to Kṛṣṇa with love and devotion!
