    Snake Gourd Pasta Sauce - Tomato free!

    Did you know that a fully ripened snake gourd vegetable transforms into a wonderful tomato replacement? The pulp surrounding the seeds are a bright red color and have a sweet flavor. The orange creamy pulp that is on the skin has a very nice mild pumpkin flavor and has the texture of very creamy mashed potatoes. These two pulps blended together create a smooth sauce and when adding yogurt whey (the sour flavor) it creates a perfect tomato sauce! So delicious!

    Here is the wonderful dish I put together together today. Mostly all ingredients came from the garden!

Smashed Chickpea & Avocado Salad Sandwich

Smashed Chickpea & Avocado Salad Sandwich


This sandwich is quick and easy to make. The salad also makes a great dip!


• 2 cups chickpeas (no skin)
• 1 large ripe avocado
• 1/4 cup fresh cilantro, chopped
• Juice from 1 lime
• Salt and pepper, to taste
• Homemade Flaxseed bread
• Sandwich toppings of your choice


  1. First we are going to start by preparing the Homemade Yeast free Flax seed bread. You will need to grind up the flax seed in a coffee grinder first. The flax seeds themselves are not digestible in their whole seed form. The high omega-3 fatty acids can only be absorbed in the body if they are ground up.

  2. Here is a closer look at what flax seeds are for those who do not know. You can usually find them at any health food store.

  3. This is what it looks like when they are all ground up.

  4. Now gather all the remaining ingredients for making the bread:

    2 cups unsifted whole-wheat flour
    2 cups unsifted all-purpose flour, plus more for dusting
    1/2 teaspoon baking soda
    1/2 teaspoon baking baking powder
    1 teaspoon salt
    2 cups light buttermilk or plain yogurt

  5. Place all ingredients in a large mixing bowl.

  6. Mix it all together. Then flour your baking pan.

    **Important note** If the dough gets too wet then just add a little more flour until it is soft but not too tough. Don't knead the dough to much, just enough to incorporate all the ingredients nicely.

  7. Place the dough in the baking pan like this and with a sharp knife slice lines through the top, but don't go to deep.

    Bake 20 minutes on 450°F/230C. Drop the heat to 400°F/200C and bake an additional 30 to 35 minutes. Bread should appear finished and sound hollow when you knock on it.

  8. Here is what it should look like when you take it out of the oven.

  9. Take it out of the pan and let it cool a little before slicing.

  10. Here is your fresh homemade yeast free sandwich bread ready to offer!

  11. Now time to make the "Smashed Chickpea & Avocado Salad". Place all the ingredients into a mixing bowl and mash it all up!

    2 cups chickpeas (no skin)
    1 large ripe avocado
    1/4 cup fresh cilantro, chopped
    Juice from 1 lime
    Salt and pepper, to taste

  12. This is what it should look like. Now you are ready to build your sandwich.

  13. Spread salad on bread and top with your favorite sandwich toppings like spinach, lettuce, tomato slices, sprouts, etc. Now you are ready to offer to Kṛṣṇa with love and devotion!
