    Snake Gourd Pasta Sauce - Tomato free!

    Did you know that a fully ripened snake gourd vegetable transforms into a wonderful tomato replacement? The pulp surrounding the seeds are a bright red color and have a sweet flavor. The orange creamy pulp that is on the skin has a very nice mild pumpkin flavor and has the texture of very creamy mashed potatoes. These two pulps blended together create a smooth sauce and when adding yogurt whey (the sour flavor) it creates a perfect tomato sauce! So delicious!

    Here is the wonderful dish I put together together today. Mostly all ingredients came from the garden!

Orange Shortbread Cookies

Description

Amazing Cookie! Super soft with a hint of orange flavor. Wonderful prasadam to take along when you are traveling!

Ingredients

    •    3 cups flour
    •    3/4 cup sugar
    •    zest from 1 orange
    •    1 tsp baking powder
    •    1/2 tsp baking soda
    •    1/4 tsp salt
    •    1/3 cup ghee
    •    1/2 cup yogurt or buttermilk
    •    1/4 cup orange juice
    •    4 drops of orange essence oil

Method

  1. First zest a full orange.

  2. In a large bowl, combine all the ingredients. Mix until you have a soft dough.

  3. The dough may be a little wet. Just wash your hands and dry them thoroughly. Then dust your hands and the outside of the dough so that it is easy to handle.

  4. Shape and flour the dough so that there are no sticky parts.

  5. Press the dough on a lightly floured surface to about 3/4 inch thick and into a square shape. Then flour your baking pan.

  6. Slice into rectangles approximately two by three inches.

  7. Place all the cakes on the floured baking pan.

  8. Now bake at 375 degrees/190 Celsius for 10 to 12 minutes, or until you see a little golden color appear on the bottom of the cookie.

  9. This is what they look like when you take them out of the oven.

  10. Now you are ready to offer to Kṛṣṇa with love and devotion!
