Coconut Carrot Cake

This cake is really delicious! This healthy dessert is sure to please anyone!
• 2 cups all purpose white flour
• 1 cup of white sugar
• 1/4 cup brown sugar
• 1/2 tsp of salt
• 2 tsp of baking powder
• 1/2 tsp of baking soda
• 2 tsp of cinnamon
• 3 cups shredded carrots
• 3/4 cup of ghee
• 1/2 cup of orange juice
• 1/2 cup of golden raisins
• 1/2 cup shredded raw coconut
• 1/2 cup of chopped walnuts
Gather all your ingredients.
Mix together the, sugars, salt, baking powder, baking soda and cinnamon until thoroughly combined.
Add the shredded carrots and the oil to the dry ingredients and mix well with a spoon (not a hand mixer!).
So far this is what it should look like. Now add the flour and mix until it is all combined.
Here is what it should look like.
Add the orange juice and mix again, then fold in the nuts, raisins and coconut.
Now you ready to place in the baking dish.
Generously oil your baking dish with ghee.
Then pour the cake mixture into the baking dish. Bake for 45 minutes or until knife/toothpick comes out clean when inserted in the center.
This is what it looks like when you take it out of the oven. Let it cool completely before putting on the frosting.
3 tbsp ghee
2 cups powdered sugar
3 tablespoons buttermilk or regular milk, or yogurt.
Combine all the ingredients and stir. If the frosting is too thick add more buttermilk. If it is too thin then add more powdered sugar until you have the right consistency.
Now it is ready to spread on the cake!
