    Snake Gourd Pasta Sauce - Tomato free!

    Did you know that a fully ripened snake gourd vegetable transforms into a wonderful tomato replacement? The pulp surrounding the seeds are a bright red color and have a sweet flavor. The orange creamy pulp that is on the skin has a very nice mild pumpkin flavor and has the texture of very creamy mashed potatoes. These two pulps blended together create a smooth sauce and when adding yogurt whey (the sour flavor) it creates a perfect tomato sauce! So delicious!

    Here is the wonderful dish I put together together today. Mostly all ingredients came from the garden!

Quick and Easy Chunky Vegetable Dal Stew

Description

Chunky style vegetable dahl! You can use any of your favorite vegetables!

Ingredients

    •    1 cup lentils (your choice)
    •    2 carrots
    •    2 potatoes
    •    2 chilies (or to taste)
    •    3 tomatoes
    •    2 chipotle chills (or any dried chili)
    •    2 tbsp. ghee
    •    1 tsp. cumin seeds
    •    dash hing
    •    1/2 tsp. cayenne pepper
    •    1 tsp. ginger powder
    •    1/2 tsp. turmeric
    •    2 tsp. salt
    •    1/2 tsp. pepper
    •    1 tsp. sugar
    •    1 tbsp. cornstarch

Method

  1. Chop up the carrots and potatoes into large chunk squares and cut two chilies in half and place in a pressure cooker. Add the rinsed lentils and water. The water should sit 2 inches above the food.

  2. This is what the veggies and dal look like after cooking in pressure cooker for 10 minutes.

  3. 3 tomatoes and 2 dried chilies in the blender.

  4. This is what the tomato mixture should look like when finished.

  5. Heat the ghee and add 1 teaspoon cumin seeds until they start crackling.

  6. Then you add the tomato mixture.

  7. Immediately add all your remaining spices.

  8. This is what it should look like when the tomatoes are fully cooked. They are a deep red color. It took about 5-6 minutes on medium heat.

  9. Tomato mixture added to the veggie and dal pot. It was a bit too liquid for me so I added some cornstarch.

  10. *NOTE* When adding cornstarch, place the cornstarch into a bowl and a little bit of water. Stir until it is dissolved, it only takes a few seconds, and then add to the dal.

  11. Stir it up!

  12. Your dal should look like this!

  13. Now you are ready to offer to Kṛṣṇa with love and devotion!
