Vegetable Paneer Sloppy Joes Sandwich

Description

This is a traditional Western style sandwich but with a Vegetarian and Sattvic twist!

Ingredients

    •    1 cup cooked lentils
    •    1 cup chopped paneer
    •    2 carrots
    •    1 zucchini
    •    5 tomatoes
    •    2 green chiles
    •    3 tbsp tamarind paste
    •    3 tbsp brown sugar
    •    2 tbsp ghee
    •    1 tsp mustard seeds
    •    1 tsp chopped fresh ginger
    •    2 tsp salt
    •    1/4 tsp pepper
    •    1/2 tsp turmeric
    •    1/2 tsp chili powder
    •    1/4 tsp cinnamon
    •    1 tsp cumin powder
    •    homemade yeast free burger buns

Method

  1. Pressure cook the lentils. In the meantime cook the tomatoes and green chile on a chapati pan on medium high flame. You are going to char the outer skin of the vegetables. Continue turning the tomatoes and chiles so that all the skin is nicely charred.

  2. Now take the seeds out of some of the chiles, depending on how hot you want it.

  3. Place the chiles and tomatoes in a blender and blend up until smooth. Set aside.

  4. Here is what it should look like. Set aside.

  5. Next chop up the carrots, zucchini and paneer in a food processor. Chop into small pieces like you see here.

  6. Now we are going to make homemade tamarind paste. In the photo are whole tamarinds, which is what they look like when picked off the tree.

  7. Take the hard shell off and place in a pot with a little water. Cook until the water comes to a boil and then turn off the flame and let it sit for 10 minutes.

  8. After 10 minutes, or when you can comfortably handle the tamarind without burning your hands, squeeze the tamarind between your fingers until you get the flesh off the rind.

  9. Now use a colander to strain out the tamarind paste. That's it!

  10. Now time to put it all together. In a large pan heat up the ghee and add the mustard seeds. When they begin to pop add the ginger and cook for about 30 seconds.

  11. Then add the chopped carrots, zucchini and paneer and cook for about 2 minutes.

  12. Add the blended tomato sauce.

  13. Then add the cooked lentils, tamarind paste, sugar and all the remaining spices.

  14. Cook for about 10 minutes until the tomatoes and veggies are fully cooked.

  15. Here is what it looks like when it is ready to serve.

  16. Serve on yeast free-burger buns and you are ready to offer to Kṛṣṇa!
