Smashed Chickpea & Avocado Salad Sandwich

This sandwich is quick and easy to make. The salad also makes a great dip!
• 2 cups chickpeas (no skin)
• 1 large ripe avocado
• 1/4 cup fresh cilantro, chopped
• Juice from 1 lime
• Salt and pepper, to taste
• Homemade Flaxseed bread
• Sandwich toppings of your choice
First we are going to start by preparing the Homemade Yeast free Flax seed bread. You will need to grind up the flax seed in a coffee grinder first. The flax seeds themselves are not digestible in their whole seed form. The high omega-3 fatty acids can only be absorbed in the body if they are ground up.
Here is a closer look at what flax seeds are for those who do not know. You can usually find them at any health food store.
This is what it looks like when they are all ground up.
Now gather all the remaining ingredients for making the bread:
2 cups unsifted whole-wheat flour
2 cups unsifted all-purpose flour, plus more for dusting
1/2 teaspoon baking soda
1/2 teaspoon baking baking powder
1 teaspoon salt
2 cups light buttermilk or plain yogurt
Place all ingredients in a large mixing bowl.
Mix it all together. Then flour your baking pan.
**Important note** If the dough gets too wet then just add a little more flour until it is soft but not too tough. Don't knead the dough to much, just enough to incorporate all the ingredients nicely.
Place the dough in the baking pan like this and with a sharp knife slice lines through the top, but don't go to deep.
Bake 20 minutes on 450°F/230C. Drop the heat to 400°F/200C and bake an additional 30 to 35 minutes. Bread should appear finished and sound hollow when you knock on it.

Take it out of the pan and let it cool a little before slicing.
