    Snake Gourd Pasta Sauce - Tomato free!

    Did you know that a fully ripened snake gourd vegetable transforms into a wonderful tomato replacement? The pulp surrounding the seeds are a bright red color and have a sweet flavor. The orange creamy pulp that is on the skin has a very nice mild pumpkin flavor and has the texture of very creamy mashed potatoes. These two pulps blended together create a smooth sauce and when adding yogurt whey (the sour flavor) it creates a perfect tomato sauce! So delicious!

    Here is the wonderful dish I put together together today. Mostly all ingredients came from the garden!

Gourmet Pizza with a Creamed Sweet Potato and Carrot Sauce

Description

This pizza is so unique and delicious!

Ingredients

Toppings:

    •    1 sweet potato
    •    1 carrot
    •    2 tbsp fresh cream
    •    crumbled paneer cheese
    •    fresh mozzarella cheese
    •    olive oil
    •    fresh thyme leaves
    •    lemon zest
    •    salt and pepper

Method

  1. First peel the sweet potato and carrot and then chop into small pieces. In a saucepan, sprinkle a little olive oil and heat for about 30 seconds. Then add the chopped veggies. Add about 2 cups of water, or whey if you have, and boil until the veggies are soft, about 10 minutes. The water should have reduced to a small amount. Next grab a hand blender and blend all the contents in the pot until nice and smooth, similar to mashed potatoes. Then add about 1/2 tsp salt and 2 tbsp of fresh cream. Then again blend it all in. Set aside.

  2. At this point you can make the chapati crust using this recipe: http://www.krsnastreats.org/recipes/breads/item/perfect-chapati-pizza-crust-2

  3. When your chapati crust is ready, preheat the oven to 250C/480F. Now you are ready to build the pizza. Add a small layer of the creamed sweet potato on top of the crust. Then sprinkle with crumbled paneer and fresh mozzarella cheese. Sprinkle with a little salt and pepper and drizzle with a little olive oil. Then place in the oven and bake for about 10-13 minutes or until all the cheese has melted and the crust feels hard to the touch.

  4. When the pizza is done, take it out of the oven and sprinkle on some fresh thyme leaves and lemon zest. Cut into 4 pieces and that is it!

  5. Now you are ready to offer to Kṛṣṇa with love and devotion!
